How the crystal is made

Four steps, none of them hurried. The crystal sets the pace, and we wait for it.

  1. 01

    The syrup and the thread

    Pure cane syrup is gently brought to saturation. A cotton thread is suspended within, ready for the crystals to take shape. Nothing else is added.

  2. 02

    It grows in the dark

    Left undisturbed, the syrup slowly forms crystals around the cotton thread, layer by layer. No stirring, no rushing. Only time and nature at work.

  3. 03

    Cleaved, never milled

    The crystal-laden thread is lifted, and each formation is carefully separated by hand along its natural facets. Never ground, never milled. Its natural character remains intact.

  4. 04

    Weighed and boxed

    Each crystal is carefully weighed and placed in a glass caddy, nestled in rosewood and emerald velvet. Finished with brass tongs and a wax-sealed scroll, ready to be treasured.

Dhaaga Mishri is a traditional form of rock sugar, made by allowing sugarcane syrup to slowly crystallise around a cotton thread. Our crystals are grown patiently over nine days, then carefully separated by hand to preserve their natural form.

Unlike fine-grained refined sugar, Dhaaga Mishri forms large crystals around a cotton thread. Regular mishri may be produced using different sugar sources and crystallisation methods. Ours is made from pure sugarcane syrup, without added sugar, colours or flavourings.

Our Dhaaga Mishri is made from pure sugarcane syrup, without added sugar, artificial colours, flavours or preservatives. We use the term organic only for ingredients and products that meet applicable certification requirements.

Our stated recipe contains no animal-derived ingredients. It is made from sugarcane syrup and water, without intentionally added animal-based processing aids.

The cotton thread provides a surface for the crystals to grow. It is not intended for consumption. Simply separate the crystals from the thread before enjoying them.

Enjoy a crystal slowly on its own, pair it with fennel after meals, or stir it into milk and traditional herbal preparations. In Ayurveda, mishri has also been used alongside herbs in certain formulations.
